Sure, everyone brings hummus to the party – but this Greek Layered Dip will be the star of the show.
With the arrival of December comes the onslaught of holiday party invitations. In our neck of the woods, get-togethers are often casual affairs with every guest bringing along a nibble (or a nip) of something to share.
Inevitably, the food table is covered with at least five different tubs of hummus. Because, well, just about everyone loves hummus, and it's a quick grab-n-go dip to buy at the store on the way to the party.
But if you give yourself an extra 10 minutes, you can make that woeful tub of hummus into a "wow!" This simple Greek layered dip starts with a base of store-bought hummus (although you could always make your own), and is topped with layers of lightly-seasoned Greek yogurt, chopped cucumbers, tomatoes, red onions, and feta cheese. And I wouldn't be mad if you added some chopped kalamata olives on top, too. Serve alongside freshly chopped vegetables or toasted pita bread, and you're easily-fancied up dip will be the belle of the holiday ball.
Greek Layered Dip (printer-friendly version)
makes 6-8 servings
10-ounce container of hummus
5 ounces plain nonfat Greek yogurt
pinch of ground sumac
pinch of dried oregano
salt and pepper, to taste
1/2 cup diced, seeded cucumber
1 small tomato, diced
1/3 cup crumbled feta cheese
pita chips, crackers, carrots, or other vegetables for serving
1. Spread the hummus into an even layer on the bottom of a serving dish. (I used a rectangular, 7.5" by 5.5" dish.)
2. In a small bowl, stir together the Greek yogurt, ground sumac, and dried oregano. Season to taste with salt and pepper.
3. Add several dollops of the Greek yogurt mixture over top the hummus layer and spread into an even layer.
4. Top the Greek yogurt layer with a layer of diced cucumber and a layer of diced tomato. Top with the crumbled feta cheese.
5. Cover and refrigerate until ready to serve. Serve alongside pita chips, crackers, and/or your favorite vegetables.
