What's For Dinner: Vegetable Capellini

We headed out for dinner tonight to one of our favorite spots -- Marathon Grill. We hit up this restaurant several times this summer as one of their nearby locations participated in the Wednesday night Center City Sips happy hour. This time I opted to try something other than my standard choice of the housemade veggie burger and fries and ordered the vegetable capellini. This pasta dish featured spinach, cremini mushrooms, tomatoes, parmigiano-reggiano, fresh basil, and olive oil. The serving size was particularly ridiculous, and I'm pretty sure I brought home about two pounds of leftover pasta. I just wish there had been more veggies given there was basically a whole box of capellini on the plate. All in all, not a bad choice, but I might have to order the veggie burger again next time we go to Marathon, regardless.
