What's For Dinner Late at Night: Arugula and Havarti Cheese Half-Sandwich

Inevitably, when I have a flight late in the evening, I never prepare a good eating plan in advance. Often I'll have a late lunch before heading to the airport, and thus am not hungry for anything prior to the flight (plus, who wants to pay airport prices for food, anyway?). But . . . this means that when I arrive at my destination even later in the evening, more likely than not, all the food options there are closed. What's a girl to do when she's hungry late at night? Though D and I tossed ideas back and forth on where to grab a quick meal when we arrived home in Laramie, our post-midnight arrival hour meant that pretty much everything was closed except the Burger King drive-thru; and let's face it, I wasn't that desperate. So, instead, I decided to look through the cupboards and fridge at home and toss together a little snack to satiate my hunger but not go overboard in the process. The reason for my travel over the holiday weekend was to attend the bachelorette party of a dear friend, and um, I ate a lot of food over the weekend. A lot. So, as a way to ease myself back into healthy eating and appease my growling stomach, I made a half-sandwich with one slice of toasted oat nut bread, a generous dollop of organic dijon mustard, a slice of Havarti cheese, and a generous handful of baby arugula. Totally hit the spot and didn't break the calorie bank -- just my kind of meal.
