What's For Dessert: Homemade Vanilla Bean Ice Cream

The other night we were craving some ice cream, but nary a carton was to be found in our house. However, we did have all the ingredients in the fridge and pantry -- and fortuitously, our ice cream maker insert was nice and chilled in the freezer.

Vanilla Bean Ice Cream (adapted from the Donvier ice cream maker manual)
makes 6+ servings

2 eggs
2/3 cup raw sugar
1 3/4 cups organic skim milk
2 cups organic heavy cream
2 teaspoon vanilla
1 vanilla bean

1. Use an electric or stand mixer to beat together the eggs and sugar and it is thick and creamy.
2. Mix in the milk, heavy cream, and vanilla.
3. Split the vanilla bean in half and use a knife to scrape out the seeds. Stir in to the mix.
4. Pour the mixture into your chilled ice cream maker and follow the manufacturer's instructions to make the ice cream. (We have a hand-cranked Donvier ice cream maker; to make ice cream, give the ice cream mixture a stir every couple of minutes until the ice cream has set up. In our experience, homemade ice cream tends to be softer than the store bought stuff; however, it's also about 100% more delicious.
5. Serve (and eat!) immediately.

  1. Looks yummy! Have you tried one-ingrediant banana ice cream? Start with a brown-ish banana. Not brown on the inside, just a little speckled on the outside. You want it to be nice and sweet so you don't have to add sugar or honey. Peel and chop into 1-2" pieces and place in the freezer. If you put it on a metal tray in a single layer it'll be ready in an hour or so. Then just run them through your food processor with the chopping blade until it looks either like ice cream or almost granular--if it's granular looking it'll scoop like ice cream. That's it.

    You can also add bits: Peanut butter. Some chocolate chips before you put in the banana. A few frozen strawberries or other fruits. A giant scoop of nutella (probably off your grocery list these days...). A little rum... :)
